Holiday goodies too tasty to miss

Everyone has their own holiday recipes. Some were passed down through generations, while others are family originals — and all are terrific new recipes for your holiday repertoire, courtesy of these Seattle chefs.

Kathy Casey’s “Over 21″ fruitcake

truth be told — fruitcakes are rarely desirable. In fact, the fruitcake your aunt gave you last year is probably still crammed in the back of your freezer as we speak.

However, the “Over 21″ fruitcake by Kathy Casey — self-described “bar cook” and author of “Sips & Apps to Nibble On” — is truly different. Every year, Casey and her team of chefs work for three days straight to make 100 Maker’s Mark Bourbon-based cakes. The fruit is soaked in alcohol, then continuously basted with a signature bourbon and brown sugar syrup for several days. The end result is a delicious pastry worthy of your counter space.

On Saturday, Dec. 17, Casey and her team of chefs will sell “Over 21″ fruitcakes ($9.95 each) at her Ballard venue, Food Studios, as part of the annual Holiday Extravaganza & Open House. Be sure to come early – these babies sell out within hours. The cakes are also available online, and can be ordered via phone at (206) 784-7840.

21 Acre Cooking Class

On Saturday, Dec. 17, Chef Darin Leonardson will offer a cooking class to help those tasked with making this year’s holiday dinner. Chef Leonardson hopes to educate his students in the art of cooking with passion, enjoyment and sustainable ingredients.

The class welcomes beginners and encourages experimentation — as well as laughing at oneself, if the results turn out less than stellar. The course will be held at the 21 Acres Kitchen in Woodinville, and is sponsored by local non-profit organizations whose goal is to educate Seattleites about sustainable agriculture and technology. The class costs $50 per student.

Morton’s Sparkling Cinnamon Apple Cocktail

Finish off your holiday dinner with this sweet cocktail, courtesy of Morton’s Steakhouse’s. This drink is satisfying all winter long — especially at holiday gatherings. Morton’s also offers recipes for holiday punchegg nog, andpomegranate prosecco punch.

Ingredients:

  • 4 ounces Lunetta Prosecco
  • 2 ounces Lindemans Pomme (Green Apple) Lambic
  • ½ ounce Monin Honey Syrup
  • 2 ounces hand shaken whipped cream

Directions:

  1. Rim martini glass with honey syrup and cinnamon sugar.
  2. Pour honey syrup, Prosecco and lambic into a shaker over ice.
  3. Stir 10 times and strain.
  4. Top with 2 spoonfuls of whipped cream and dust with cinnamon sugar.
